Method

  • Mix the oil with garlic and lemon zest, season well and coat the chicken. Cover and chill for at least 1 hour or until needed.
  • Meanwhile cook the pasta according to the pack instructions, drain and cool under cold running water.
  • Mix the pasta with 5 tablespoons Heinz Salad Cream, pesto, olives, tomatoes, basil and season well. Cover and chill until needed.
  • Cook the chicken on the barbecue over grey coals turning occasionally, allow 15-20 minutes for the chicken breasts or 25 minutes for the drumsticks, ensuring the juices run clear when the meat is pierced with a sharp knife.
  • Brush the chicken with 2 tablespoons Heinz Salad Cream a minute or so before the end of cooking.
  • Serve the chicken with the pesto pasta salad.

You will need

  • 5 tbsp Heinz Salad Cream
  • 1 tbsp extra virgin olive oil
  • 2 large garlic cloves, crushed
  • Zest of 1 lemon
  • 4 chicken breasts or 8 drumsticks
  • 300g fresh penne pasta
  • 4 tbsp green pesto
  • 100g pitted black olives
  • 100g drained sunblush or sundried tomatoes in oil, chopped
  • Small handful of basil, shredded
